3 Make the salmon: Place the salmon fillets skin-side up on a cutting board. Using a sharp knife, make a few very shallow slashes in the skin that are about 1 inch long and just deep enough to penetrate the skin without cutting into the flesh (this is to ensure the fillets stay flat when pan-searing). Season the skin side with salt and pepper and then sprinkle 1 tablespoon of the flour over each fillet, gently patting the flour onto the skin. Turn the fillets over and season the flesh with the remaining salt and pepper.
